Protein Poppers

INGREDIENTS:
  • 1/4 Red Bell Peppers
  • 2 Baby Carrot
  • 1/4 Celery stick
  • 1 Kale leaf
  • Fat-Free Feta Cheese
  • Egg Whites

DIRECTIONS:
  1. Preheat oven at 375˚F
  2. Spray a muffin tin with non stick cooking spray
  3. Place vegetables in food processor
  4. Pour a 1/4 egg whites into muffin cup
  5. Top with chopped veggies
  6. Sprinkle with fat-free feta cheese
  7. Bake at 375˚F until whites are firm.
These are fast and easy to make.  You can make them ahead of time and pack for breakfast or snacks.  They are full of protein and flavor. I suggest eating with a whole wheat english muffin.
